We also embrace that culture by preparing food from scratch so that the cooking involves no preservatives. This results in healthier food which can be consumed by anyone. Indians don’t believe in consuming prepared meals as they lack the important nutrients required by the body to function properly.

Indian food is so delicious because Indian cooking is all about development of flavor, through the use of slow cooking and plentiful amounts of spices and herbs.

Most people have no idea how much time and flavouring goes into cooking Indian dishes.

Take a standard chicken curry dish for example. First the chicken is marinated in yogurt, spices and ginger and garlic, all before going in the curry.

Then a generous amount of chopped onions will be fried in oil until they turn golden brown. Before frying the onions, cumin seeds and other fragrant ingredients such as a cinnamon stick or bay leaf will be added to “season” the oil for more layers of flavor. The fried onions will then be the base for the gravy, as the onions are going to soak up all the spices about to be added.

Now comes the serious part of the flavouring. Freshly ground spices such as red chili powder, coriander powder, turmeric powder and garam masala are going to be added to the onions with some water and salt (fresh tomatoes added at this point as well.) This is all cooked down until the onions soak up all the spices and the flavors are super concentrated.

At some point the chicken is then added (It's grilled a bit before adding it to the curry though), and now all the flavors from the marinated chicken are being added to the mix. Then some water will be added so the flavors can come together to form a gravy. This will then cook down even further, as all the flavors are becoming more and more concentrated. A few minutes before it's finished some freshly chopped coriander will be added with some cream and more garam masala.

All that for a “simple” chicken curry. THIS is why Indian food is so delicious.
